  • 45 lb beef shoulder roast
  • 2 tablespoons neutral oil
  • 2 cups fresh apple cider
  • 2 cups chicken stock
  • 2 tablespoons dijon mustard
  • 1 tablespoon dehydrated minced onion
  • 1 head garlic
  • 3 sprigs rosemary
  • 4 sprigs thyme
  • 1 red onion, cut into thick slices
  • 2 firm and slightly tart apples, peeled and cut into wedges

  • freshly cracked black pepper

Instructions

  1. Preheat your oven to 325°F.
  2. Trim excess fat from the beef shoulder roast and pat dry. Sear in heated oil in a large Dutch oven for about 4–5 minutes on each side until browned.
  3. In a bowl, mix apple cider, chicken stock, dijon mustard, and dehydrated onion. Pour over the seared beef.
  4. Add tied rosemary, thyme, and garlic to the pot. Cover tightly and bake for about 3 hours, flipping halfway through.
  5. Add red onion wedges and apple slices during the last 30–45 minutes of cooking.
  6. Allow resting for 30 minutes before serving.
