  • 1 cup packed light brown sugar
  • ½ cup granulated sugar
  • 4 teaspoons ground cinnamon (divided)
  • ½ teaspoon ground nutmeg (optional)
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • ¾ cup unsalted butter (melted or room temperature)
  • ¼ cup Greek yogurt
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • ½ cup milk
  • 1 ½ cups diced apples (Granny Smith or Honeycrisp)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a muffin tin with paper liners.
  2. For the crumble, whisk together flour, brown sugar, granulated sugar, and cinnamon in a bowl. Add melted butter and mix until crumbly; set aside.
  3. In another bowl, combine flour, baking powder, salt, and additional cinnamon.
  4. In a large bowl, cream together the sugars and butter until fluffy. Mix in eggs, Greek yogurt, and vanilla.
  5. Gradually add half the dry mixture followed by milk, then fold in the remaining flour mixture and diced apples gently.
  6. Fill muffin cups three-quarters full with batter and top with crumble mixture.
  7. Bake for about 20 minutes until golden brown; allow to cool slightly before transferring to a wire rack.
