  • 1 cup uncooked long-grain white rice
  • 1 lb ground beef
  • 1 small diced onion
  • 4 minced garlic cloves
  • 3 cups low-sodium beef broth
  • Salt and pepper to taste
  • 1 tsp Italian seasoning
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 3 tbsp butter

Instructions

  1. In a large skillet, melt 1 tablespoon of butter over medium heat. Sauté the diced onion for about 3-4 minutes until soft.
  2. Add the ground beef, breaking it apart as it cooks until no longer pink. Drain any excess fat.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the uncooked rice, beef broth, Italian seasoning, salt, and pepper. Stir well to combine.
  5. Bring to a boil, then reduce heat to simmer and cover. Cook for about 18-20 minutes until rice is tender and liquid is absorbed.
  6. Meanwhile, prepare the cheese sauce: In a small saucepan, melt the remaining butter over low heat. Stir in milk, cheddar cheese, and Parmesan until smooth and creamy.
  7. Combine the cheese sauce with the beef and rice mixture in the skillet, stirring gently to mix well.
  8. Allow to cook uncovered for another couple of minutes before serving hot.
