  • 1 ½ pounds sweet potatoes, cut into ½” cubes
  • 14.5 ounces black beans, rinsed and drained
  • ½ cup frozen yellow corn, thawed and drained
  • 1 cup green pepper, cut into 1” pieces
  • 1 cup red pepper, cut into 1” pieces
  • 4 Tablespoons olive oil, divided
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon ground coriander
  • 1 teaspoon sea salt
  • ¼ teaspoon pepper
  • 3 Tablespoons honey
  • 3 Tablespoons lime juice
  • 3 Tablespoons fresh cilantro, chopped
  • Corn or flour tortillas

Instructions

  1. Preheat oven to 425°F.
  2. Toss sweet potatoes with olive oil and spices; spread on a baking sheet.
  3. Roast for 20 minutes; add peppers and roast for another 20 minutes.
  4. Mix honey, lime juice, and cilantro for the sauce.
