  • 5 1/2 tbsp butter
  • 1 1/3 cups chopped carrots
  • 1 cup chopped celery
  • 1 cup chopped yellow onion
  • 2 cloves garlic
  • 3 cups low-sodium chicken broth
  • 3 1/2 cups cubed russet potatoes
  • 3 cups broccoli florets
  • 6 tbsp all-purpose flour
  • 3 cups milk (1% or 2%)
  • 2 cups shredded sharp cheddar cheese

Instructions

  1. In a large pot over medium heat, melt 4 tbsp of butter. Add carrots, celery, and onion; sauté for about 4 minutes until softened.
  2. Stir in minced garlic and cook for another 30 seconds. Pour in chicken broth, potatoes, thyme, salt, and pepper. Bring to boil, then reduce heat and simmer for about 15 minutes until potatoes are tender.
  3. Add broccoli florets and cook for an additional 5 minutes until bright green.
  4. In a separate saucepan, melt remaining butter over medium heat. Whisk in flour and cook for one minute. Gradually add milk while whisking until smooth; cook until thickened.
  5. Combine the creamy mixture with the soup pot; stir in cheddar cheese until melted.
  6. Serve warm in bowls and enjoy!
