  • 4 large russet potatoes
  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1/4 cup diced tomatoes
  • 1/4 cup sliced black olives
  • 1/4 cup chopped cilantro
  • 1 tbsp olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Scrub the potatoes, pierce them with a fork, rub with olive oil, and season with salt and pepper. Bake for about 45 minutes or until tender.
  3. While baking, cook ground beef in a skillet until browned; drain excess fat.
  4. Add taco seasoning and water; simmer for five minutes.
  5. Once potatoes are baked and slightly cooled, cut slits on top and gently squeeze open.
  6. Fill each potato with seasoned beef and sprinkle with cheddar cheese.
  7. Return to the oven for an additional five minutes until cheese is melted.
