  • 1 tsp vanilla extract
  • 1 ½ cups strong brewed espresso (cooled)
  • 3 tbsp almond extract (or additional espresso)
  • Ladyfinger cookies (about 7 oz)
  • 1 ½ cups cherry preserves
  • Fresh cherries (for garnish)

Instructions

  1. Whip heavy cream until soft peaks form. Gently fold in mascarpone, powdered sugar, and vanilla until smooth.
  2. Combine cooled espresso with almond extract in a shallow bowl.
  3. Quickly dip each ladyfinger into the espresso mixture and arrange them in a 9×9-inch dish.
  4. Spread half of the cream mixture over the ladyfingers, then layer half of the cherry preserves and fresh cherries.
  5. Repeat layering with remaining dipped ladyfingers, cream, and cherry mixture.
  6. Cover and refrigerate for at least six hours or overnight.
  7. Before serving, dust with cocoa powder and garnish with fresh cherries or shaved chocolate.
