  • 2 large boneless, skinless chicken breasts
  • 3 cups chicken broth
  • 4 oz cream cheese
  • 1 cup shredded Parmesan cheese
  • 8 oz uncooked pasta (elbow macaroni or shells)
  • Optional: mozzarella cheese, fresh herbs for garnish

Instructions

  1. Place the chicken breasts in the bottom of a slow cooker. Season with minced garlic, Italian seasoning, salt, and pepper.
  2. Pour chicken broth over the chicken and cover. Cook on low for 4–5 hours until tender.
  3. Shred the chicken and return it to the slow cooker. Mix in softened cream cheese and shredded Parmesan until smooth.
  4. Stir in uncooked pasta and cover again; cook on high for 30–45 minutes until pasta is tender.
  5. If desired, add mozzarella cheese on top during the last few minutes of cooking to melt.
