  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 1/2 cup red onion, diced

Instructions

  1. In a bowl, whisk together lime juice, olive oil, cilantro, garlic, cumin, salt, and pepper.
  2. Marinate flank steak in the mixture for at least 30 minutes (preferably up to 4 hours).
