  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp coconut extract
  • 8 oz Cool Whip, thawed
  • 2 (3.4 oz) boxes instant coconut cream pudding mix
  • 3 cups half-and-half
  • 1 cup sweetened shredded coconut, toasted

Instructions

  1. Prepare the Crust: Mix graham cracker crumbs, sugar, and melted butter in a bowl. Press firmly into the bottom of a 9×13 inch baking dish.
  2. Make the Cheesecake Layer: In another bowl, beat cream cheese, powdered sugar, and coconut extract until smooth. Fold in one container of Cool Whip until well combined.
  3. Create the Pudding Layer: Whisk pudding mix with half-and-half until thickened. Spread over the cheesecake layer.
