  • 1 teaspoon baking soda
  • 1 cup old fashioned oats
  • 1 cup corn flakes
  • 1 cup pecans (toasted and roughly chopped)
  • 1/2 cup coconut flakes
  • 1 cup peanut butter chips
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Toast the pecans in a dry skillet over medium heat for 3–5 minutes until fragrant. Let cool.
  2. In a large bowl, beat softened butter until light and fluffy.
  3. Add both sugars and mix well; scrape down the bowl's sides.
  4. Incorporate eggs one at a time along with vanilla extract until fully blended.
  5. In another bowl, combine flour, salt, baking powder, and baking soda; gradually add to the wet mixture without overmixing.
  6. Gently fold in oats, corn flakes, toasted pecans, and coconut flakes.
  7. Stir in peanut butter chips and chocolate chips until evenly distributed.
  8. Chill the dough for at least an hour or up to 24 hours.
  9. Preheat the oven to 350°F and prepare baking sheets with parchment paper.
  10. Scoop generous amounts of dough onto prepared sheets, spacing them apart.
  11. Bake for 12–14 minutes or until golden on the edges but slightly shiny in the center.
