  • 1 large sweet onion (peeled and chopped)
  • 34 cloves garlic (minced)
  • 1 ½ pounds boneless chicken breast
  • 30 ounces canned cannellini beans (drained)
  • 7 ounces chopped green chiles
  • 4 cups chicken broth
  • 8 ounces cream cheese (cut into cubes)

Instructions

  1. In a large pot over medium heat, melt the butter and sauté the onion until translucent (about 5 minutes).
  2. Stir in garlic, ground cumin, and oregano; cook for an additional minute until fragrant.
  3. Add the chicken breasts and chicken broth; bring to a simmer and cook for 15-20 minutes until the chicken reaches an internal temperature of 165°F.
  4. Remove chicken, shred it using two forks, and return it to the pot along with drained cannellini beans, green chiles, frozen corn, and cream cheese. Mix well.
