  • 1 cup carrots, chopped
  • 1 cup peas
  • 1 cup corn
  • 1 onion, chopped
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 sheet puff pastry or pie crust
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon thyme
  • 1 teaspoon parsley

Instructions

  1. Preheat oven to 425°F (220°C). In a skillet, heat olive oil over medium heat. Season chicken with salt and pepper, then cook until golden brown (6-7 minutes per side). Remove and chop into bite-sized pieces.
  2. In the same skillet, add more olive oil if needed and sauté onions and carrots until softened (about 5 minutes).
  3. Pour in chicken broth and heavy cream; simmer for about five minutes, stirring until thickened.
  4. Stir in chopped chicken, thyme, parsley, salt, and pepper. Remove from heat.
  5. Roll out puff pastry onto a floured surface; place one layer into a pie dish. Pour in the creamy filling and cover with another pastry layer. Seal edges.
  6. Cut slits in the top crust for steam escape. Bake for 25-30 minutes until golden brown.
  7. Let cool for ten minutes before serving.
