  • 1 lb chow mein noodles (fresh)
  • 2 cups cabbage (thinly sliced)
  • 1 cup celery (sliced)
  • 1 small onion (sliced)
  • 2 tbsp vegetable oil
  • 2 tbsp regular soy sauce
  • 1/2 tbsp dark soy sauce
  • 2 tbsp vegetarian stir fry sauce
  • 1 tbsp sesame oil
  • 2 garlic cloves (minced)
  • 1/4 cup chicken stock (or cold water)
  • 1/2 tbsp cornstarch

Instructions

  1. Prepare the sauce by mixing all sauce ingredients in a bowl.
  2. Boil water in a large pan and blanch chow mein noodles for 20-30 seconds until loosened; drain without rinsing.
  3. Heat vegetable oil in a large pan over medium heat. Sauté onions, cabbage, and celery for about 1 minute until softened.
  4. Push veggies to one side of the pan, add remaining oil, then toss in noodles and sauce; mix until evenly coated.
  5. Serve immediately and enjoy!
