2 cups pecans
6 tablespoons butter
1/2 cup light brown sugar
1/2 cup granulated sugar
1/2 cup corn syrup
1/2 cup condensed milk
1 1/2 teaspoons vanilla extract
2 cups chopped chocolate
Instructions
Preheat your oven to 350°F (175°C) and toast 2 cups of pecans on a baking sheet for about 10 minutes until golden brown.
In a medium saucepan over medium heat, combine 6 tablespoons butter, 1/2 cup light brown sugar, 1/2 cup granulated sugar, 1/2 cup corn syrup, 1/2 cup condensed milk, and 1 1/2 teaspoons vanilla extract. Stir continuously until melted and combined, then bring to a gentle boil.
Remove from heat and fold in the toasted pecans until fully coated in caramel.
Drop heaping tablespoons of the pecan-caramel mixture onto parchment-lined trays and allow to cool slightly.
Melt 2 cups chopped chocolate and drizzle or dip each turtle into the chocolate coating. Let set for about an hour at room temperature.
