  • 1/2 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 1/4 cups ripe bananas (about 3 medium)
  • 1 (8-ounce) can crushed pineapple with juice
  • 1/2 cup + 1 tbsp organic sunflower oil
  • 1/2 cup macadamia nuts (dry roasted & chopped)
  • 1/2 cup unsweetened coconut flakes

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Dry roast macadamia nuts until slightly browned.
  3. In one bowl, combine flour, sugar, baking powder, baking soda, and salt.
  4. In another bowl, whisk eggs, vanilla extract, ripe bananas, crushed pineapple (with juice), and sunflower oil.
  5. Mix dry ingredients into wet ingredients until just combined.
  6. Fold in macadamia nuts and coconut flakes gently.
  7. Pour batter into the greased loaf pan and bake for 55-65 minutes or until a knife comes out clean.
  8. Let cool before slicing.
