  • 1.5 lbs chicken breast, cut into bite-sized pieces
  • 1/4 cup soy sauce
  • 2 tablespoons olive oil
  • 2 tablespoons honey (or brown sugar)
  • 3 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 1 can (20 oz) pineapple chunks, drained
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 medium red onion, cut into wedges
  • Fresh cilantro, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). In a bowl, combine chicken, soy sauce, olive oil, honey, garlic, ginger, salt, and pepper. Let marinate for 10–15 minutes.
  2. Spread diced bell peppers, onion wedges, and drained pineapple on a sheet pan.
  3. Place the marinated chicken on top of the vegetables and pour any remaining marinade over everything.
  4. Bake for 25–30 minutes or until chicken reaches an internal temperature of 165°F (74°C). Stir halfway through cooking.
  5. Garnish with fresh cilantro before serving warm over rice or quinoa.
