  • 1/4 cup cashew butter (or peanut butter)
  • 1/4 cup maple syrup
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cup chocolate chips (for the dough)
  • 1 cup chocolate chips (for topping)
  • 1 tsp coconut oil (for melting)

Instructions

  1. In a bowl, mix together almond flour, cashew butter, maple syrup, melted coconut oil, vanilla extract, and salt until well combined. Fold in the chocolate chips.
  2. Line a cutting board or plate with parchment paper and press the cookie dough mixture into an even layer about 1/2-inch thick.
  3. In a microwave-safe bowl, combine the chocolate chips and coconut oil. Heat in 30-second intervals until melted and smooth.
  4. Pour the melted chocolate over the cookie dough layer and spread evenly. Optionally sprinkle flaky sea salt on top.
  5. Freeze for about 10 minutes until set, then slice into chunks.
