  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • Lime zest from 1 lime
  • 1 teaspoon chili powder
  • 1 teaspoon brown sugar
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/41/2 teaspoon chipotle chili powder (optional)
  • 1/4 teaspoon pepper
  • 2 medium avocados, chopped
  • 1 cup cherry tomatoes, quartered
  • Fresh corn from 1 ear sweet corn
  • 1/3 cup finely chopped red onion
  • 1/2 red bell pepper, chopped
  • 1 jalapeño pepper, diced
  • 2 tablespoons finely chopped cilantro
  • 1 garlic clove, minced (or 1/4 teaspoon garlic powder)
  • 2 tablespoons lime juice for salsa
  • 1/4 teaspoon ground cumin for salsa
  • 1/4 teaspoon salt for salsa
  • 1/8 teaspoon pepper for salsa

Instructions

  1. Prepare the Marinade: Whisk together olive oil, lime juice and zest, chili powder, brown sugar, salt, cumin, smoked paprika, garlic powder, and pepper in a bowl.
  2. Marinate Chicken: Place chicken breasts in a resealable bag; pour marinade over them. Seal and refrigerate for at least 30 minutes.
  3. Cook Chicken: Heat a grill pan over medium-high heat. Cook marinated chicken for about 5 minutes on each side until cooked through.
  4. Make Avocado Salsa: In a mixing bowl, combine diced avocados, cherry tomatoes, corn kernels, onion, jalapeño, cilantro, garlic (optional), lime juice, cumin, salt and pepper. Mix gently.
  5. Serve: Slice the grilled chicken and top it generously with avocado salsa. Enjoy!
