  • 1 tablespoon olive oil
  • 1/2 cup fresh cranberries
  • 1/4 cup honey
  • 1/4 cup orange juice
  • 4 ounces Brie cheese, rind removed
  • 1/4 cup chopped fresh parsley
  • 1/2 cup panko breadcrumbs

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a saucepan over medium heat. Add cranberries; cook until softened (about 5 minutes). Stir in honey, orange juice, cinnamon, ginger, salt, and pepper. Remove from heat and cool slightly.
  3. Cut a pocket in each chicken breast without slicing all the way through. Stuff with Brie cheese followed by the cranberry mixture.
  4. Secure openings with toothpicks. Sear on both sides in a skillet over medium-high heat until golden brown.
  5. Top with panko breadcrumbs mixed with melted butter, then bake in the oven for 20-25 minutes until cooked through (165°F internally).
