  • 1 cup unsalted pistachios (finely ground, plus extra for decoration)
  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 teaspoon baking powder
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup unsalted butter
  • 1 cup mascarpone cheese
  • ½ cup milk
  • 1 cup heavy cream
  • 1 cup powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two 8-inch round cake pans and line the bottoms with parchment paper.
  2. In a food processor, finely grind 1 cup of pistachios and set aside some for decoration.
  3. In a large bowl, cream together butter and sugar until fluffy. Add eggs one at a time, then stir in vanilla extract.
  4. In another bowl, mix flour, baking powder, and ground pistachios. Gradually add this to the wet mixture alternating with milk until just combined.
  5. Divide the batter between prepared pans and bake for 25-30 minutes or until a toothpick comes out clean. Let cool.
  6. For frosting, beat mascarpone cheese, heavy cream, powdered sugar, and vanilla until soft peaks form.
  7. Once cakes are cool, stack layers with frosting in between and cover the top and sides with remaining frosting.
  8. Decorate with reserved pistachios.
