  • 1/4 cup vegetable oil

  • 1/4 cup white sugar
  • 1/2 cup packed light brown sugar
  • 1 teaspoon vanilla essence
  • 1 1/2 cups tightly packed finely grated zucchini
  • 1 cup semi-sweet chocolate chips (split for use)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In one bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In another bowl, combine eggs, vegetable oil, sour cream, sugars, and vanilla essence until smooth.
  4. Add wet ingredients to dry ingredients and mix until just combined. Fold in zucchini and half of the chocolate chips.
