  • ¾ cup all-purpose flour
  • ½ cup brown sugar
  • ½ teaspoon cinnamon
  • ½ cup cold unsalted butter, cubed

Instructions

  1. Preheat the oven to 350°F (175°C). Mix graham cracker crumbs, melted butter, and sugar in a bowl. Press into the bottom of a springform pan and pre-bake for 10 minutes.
  2. In another bowl, beat the cream cheese until smooth. Gradually add sugar and vanilla extract; mix until combined. Add eggs one at a time, then gently fold in sour cream.
  3. Pour the cheesecake filling over the crust.
  4. In a saucepan, combine diced apples with brown sugar, cinnamon, cornstarch mixed with water, and lemon juice. Cook until apples are tender (about 5-7 minutes).
  5. Layer the apple mixture on top of the cheesecake filling. Prepare crumble topping by mixing flour, brown sugar, and cold butter until crumbly; sprinkle on top.
  6. Bake at 325°F (160°C) for 55-65 minutes until set but slightly jiggly in the center. Cool completely before refrigerating for at least four hours.
