  • 1 lb ground beef or turkey
  • ½ cup breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 1 large egg
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can (14 oz) crushed tomatoes
  • 6 cups chicken or vegetable broth
  • 2 cups fresh spinach or kale
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix ground beef or turkey, breadcrumbs, Parmesan cheese, parsley, egg, salt, and pepper. Shape into small meatballs.
  2. Heat olive oil in a large pot over medium heat. Brown meatballs on all sides for about 5 minutes. Remove and set aside.
  3. In the same pot, sauté onion, carrots, celery for about 5-7 minutes until softened. Add minced garlic and cook for another minute.
  4. Stir in crushed tomatoes and broth; add dried basil and oregano. Bring to a simmer.
  5. Return meatballs to the pot and let simmer for 15-20 minutes until cooked through.
  6. Stir in spinach (or kale) and pasta; cook until pasta is al dente (about 8-10 minutes).
  7. Season to taste with salt and pepper before serving.
