  • 2 tablespoons olive oil
  • 1 ¼ lbs. boneless skinless chicken breast
  • lemon pepper seasoning
  • 1 teaspoon EACH: dried oregano, basil, parsley, mustard powder
  • ½ teaspoon dried dill weed
  • ½ cup dry white grape juice
  • 2 tablespoons butter
  • 1 small yellow onion (diced)
  • ¾ cup carrots (diced)
  • 2 sticks celery (diced)
  • 4 cloves garlic
  • 6 cups chicken broth
  • 1 teaspoon hot sauce
  • 1 teaspoon Worcestershire sauce
  • ½ cup heavy cream
  • 2 cups fresh spinach
  • Juice of 1 lemon (34 Tbsp.)
  • ¾ cup orzo (uncooked)

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Season the chicken with lemon pepper seasoning and sear until golden on both sides. Remove from heat and dice.
  2. In the same pot, add white grape juice to deglaze and simmer until reduced by half. Stir in butter, onions, carrots, celery, and garlic; soften for about 5 minutes.
  3. Add herbs and hot sauce; stir well. Pour in chicken broth and bring to a boil before reducing to a simmer. Add back the diced chicken and cook until fully heated through.
  4. Cook orzo separately according to package instructions; drain.
  5. Lower heat and stir in heavy cream and Parmesan cheese until melted. Add fresh spinach and lemon juice; stir until wilted.
  6. Serve warm over cooked orzo.
