  • 1/2 cup unsalted butter, melted
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 cup granulated sugar (for filling)
  • 1/4 cup all-purpose flour (for filling)
  • 1/3 cup fresh lemon juice
  • 1 tablespoon lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour, sugar, baking powder, melted butter, and salt until crumbly. Reserve 1/2 cup for topping.
  3. Press the remaining mixture into the bottom of an 8×8-inch baking pan lined with parchment paper. Bake for 12-15 minutes until lightly golden.
  4. In another bowl, whisk together eggs, sugar, flour, lemon juice, and lemon zest until smooth. Pour over the baked crust.
  5. Sprinkle reserved crumb mixture on top and bake for an additional 20-25 minutes until set and lightly golden.
  6. Cool completely before slicing into squares.
