  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic (minced)
  • 1 cup chicken broth
  • Juice and zest of 1 lemon
  • ¾ cup heavy cream
  • ½ cup grated Parmesan cheese
  • 4 cups fresh spinach leaves

Instructions

  1. Pound the chicken breasts to an even thickness and season with salt and pepper.

  5. Add spinach to the sauce until wilted, return chicken to the pan, spoon sauce over it, cover, and cook for an additional two minutes.
