  • 1 cup granulated sugar
  • 4 tbsp unsalted butter, cubed
  • 1 1/4 cups toasted, coarsely chopped pecans
  • 4 tbsp unsalted butter, cubed (for adding later)
  • 1/4 cup boiling water

Instructions

  1. Prepare your baking sheet by lining it with foil and applying nonstick spray or using a silicone mat.
  2. In a medium saucepan over medium heat, combine brown sugar, granulated sugar, and evaporated milk. Stir until dissolved.
  3. Cook the mixture until it reaches 240°F on a candy thermometer, stirring occasionally.
  4. Remove from heat and add cubes of butter without stirring; let sit for one minute.
  5. Stir in toasted pecans (and vanilla extract if desired) until fully combined.
  6. Quickly drop spoonfuls onto the prepared baking sheet before the mixture cools too much.
  7. Allow pralines to set at room temperature for about 30 minutes before enjoying.
