  • ¼ tsp black pepper
  • 2 cups cooked grains (brown rice, quinoa, or cauliflower rice)
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (diced)
  • ½ red onion (thinly sliced)
  • ½ cup kalamata olives (pitted)
  • â…“ cup feta cheese (crumbled; optional for dairy-free)
  • ¼ cup fresh herbs (parsley or dill, chopped)
  • 1 cup Greek yogurt (plain; coconut yogurt for dairy-free)
  • ½ cucumber (grated, squeezed dry)
  • 1 garlic clove (minced)

  • 2 tbsp lemon juice (for vinaigrette)
  • 1 tsp honey (omit for Whole30)
  • ½ tsp dried oregano (for vinaigrette)

Instructions

  1. Marinate the steak by mixing olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper in a bowl. Coat the steak with the marinade and refrigerate for at least 30 minutes.
  2. Prepare the tzatziki sauce by combining Greek yogurt (or coconut yogurt), grated cucumber, lemon juice, minced garlic, dill, salt, and pepper in a separate bowl. Chill in the fridge.
  3. Whisk together ingredients for the vinaigrette: olive oil, lemon juice, honey (if using), minced garlic, oregano, salt, and pepper.
  4. Cook the marinated steak in a hot skillet over medium-high heat for about 4-5 minutes on each side until desired doneness is achieved. Let it rest before slicing.
  5. Assemble your bowls starting with cooked grains at the base and layering with sliced steak and desired toppings like tomatoes and cucumbers. Drizzle with tzatziki sauce and vinaigrette.
