  • 1 Pound Ground Beef
  • 1 Can (14.75 Ounces) Cream-Style Corn
  • 1 Cup Frozen Corn
  • 1 Can (10 Ounces) Diced Tomatoes and Green Chilies (Rotel)
  • 1 Packet (1 Ounce) Taco Seasoning
  • 2 Cups Shredded Cheddar Cheese
  • 1 Box (8.5 Ounces) Jiffy Cornbread Mix
  • 2 Eggs
  • ⅓ Cup Whole Milk

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a cast iron skillet, brown 1 pound of ground beef over medium heat and drain excess grease.
  3. Stir in 1 can of cream-style corn, 1 cup of frozen corn, 1 can of diced tomatoes with green chilies, and 1 packet of taco seasoning. Cook for about 5 minutes.
  4. Sprinkle 1 cup of shredded cheddar cheese over the mixture.
  5. In a separate bowl, prepare the Jiffy cornbread mix with 2 eggs and ⅓ cup of whole milk until just combined.
  6. Pour the cornbread batter evenly over the beef mixture.
  7. Bake for 20-25 minutes until golden brown.
  8. Top with an additional cup of shredded cheddar cheese and return to the oven for another 5 minutes until melted.
