Ingredients

Scale
  • 1 1/2 cups salted butter, softened
  • 1 1/4 cups light brown sugar
  • 1 tablespoon pure vanilla extract
  • 2 large eggs, at room temperature
  • 4 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 12 ounces milk chocolate, melted
  • 2 tablespoons salted butter
  • 3 tablespoons cinnamon sugar

Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, cream together the softened butter and brown sugar until light and fluffy. Add vanilla and eggs; mix until fully incorporated.
  2. In another bowl, whisk together flour, baking soda, cinnamon, ginger, nutmeg, and salt. Gradually add to the wet mixture until just combined.
  3. Roll out dough to about 1/4 inch thick on a floured surface. Cut into pumpkin shapes and place on parchment-lined baking sheets.
  4. Chill cut-out cookies in the freezer for 15-20 minutes before baking for better shape retention.
  5. Bake for 8-12 minutes or until lightly golden brown. Allow cooling on racks.
  6. Brush warm cookies with browned butter and sprinkle with cinnamon sugar before assembling with melted chocolate.
