  • 1/2 cup brown sugar (packed)
  • 1 teaspoon vanilla extract
  • 3 cups rolled oats
  • 1 cup semisweet or dark chocolate chips
  • 1/2 cup peanut butter

  1. Line an 8-inch or 9-inch square baking dish with parchment paper.

  4. Press half of the oat mixture into the prepared dish to form a crust.
  5. In a microwave-safe bowl, melt the chocolate chips and peanut butter together, stirring until smooth.
  6. Spread the chocolate mixture over the crust, saving some for drizzling later.
  7. Pour the remaining oat mixture on top and gently press down.
  8. Drizzle with leftover chocolate and refrigerate for at least 2-3 hours before cutting into squares.
