  • 100g Powdered Sugar
  • 250ml Whipping Cream
  • 1 cup Strong Coffee (cooled)
  • Spekulatius Cookies (or gingerbread/spiced biscuits)
  • Fresh Berries (raspberries, strawberries, blueberries)
  • Unsweetened Cocoa Powder (for dusting)

Instructions

  1. Brew 1 cup of strong coffee and let it cool.
  2. In a bowl, mix mascarpone cheese and powdered sugar until smooth.
  3. In another bowl, whip the cream to stiff peaks and gently fold into the mascarpone mixture.
  4. Prepare your berries by washing them thoroughly; sweeten with sugar if desired.
  5. Dip each cookie briefly in the cooled coffee to soak without falling apart.
  6. In a dish, layer soaked cookies, half the mascarpone mixture, and half the berries; repeat this process.
  7. Cover and refrigerate for at least 4 hours or overnight.
  8. Before serving, dust with cocoa powder and garnish with extra berries.
