  • ¾ cup granulated sugar
  • ½ cup light brown sugar
  • 2 large eggs
  • 1¼ cups canned pumpkin puree

  • 4 oz cream cheese
  • 4 tbsp unsalted butter
  • 1 cup powdered sugar
  • 13 tsp milk, as needed

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a loaf pan.

  3. In another bowl, mix canola oil, granulated sugar, brown sugar, eggs, pumpkin puree, and vanilla until smooth.

  5. Pour batter into prepared pan and bake for about 55 minutes or until a toothpick comes out clean.
  6. Let cool before preparing frosting by beating cream cheese and butter until fluffy; gradually add powdered sugar and vanilla.
