  • 1/4 cup milk
  • 1/4 cup all-purpose flour (for streusel topping)
  • 1/4 cup light brown sugar (for streusel topping)
  • 1 tablespoon cinnamon (for streusel topping)
  • 4 tablespoons cold butter (for streusel topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×9 square baking dish with cooking spray or parchment paper.
  2. In a large bowl, combine the dry ingredients: flour, baking powder, salt, cinnamon, and pumpkin pie spice.
  3. In another bowl, whisk together the wet ingredients: pumpkin, brown sugar, oil, maple syrup, and milk.
  4. Pour the wet mixture into the dry mixture; stir until just combined.
  5. Spread the batter evenly in the prepared pan.
  6. For the streusel topping, mix together flour, brown sugar, and cinnamon; cut in cold butter until crumbly. Sprinkle on top of the batter.
  7. Bake for about 35 minutes or until a toothpick comes out mostly clean from the center.
  8. Let cool before slicing and serving.
