Ingredients

  • 2 double shots of blonde espresso
  • 12 cups ice cubes
  • Cold oat milk, to taste
  • ¼ cup packed light brown sugar
  • 2 cinnamon sticks or 1½ tsp pumpkin pie spice
  • 2 tbsp pumpkin puree
  • ½ cup warm water
  • 1 tsp vanilla extract

Instructions

  1. In a saucepan, whisk together brown sugar, pumpkin puree, cinnamon sticks (or pumpkin pie spice), and warm water. Simmer on low heat for 2-3 minutes until slightly thickened.
  2. Remove from heat and stir in vanilla extract. Strain if desired.
  3. In a jar, combine 1 double shot of espresso with 1-2 tablespoons of syrup and ice cubes. Shake vigorously for 20-30 seconds.
  4. Pour into a glass (without ice cubes) and add oat milk to taste.
  5. Garnish with additional pumpkin pie spice.
