2 double shots of blonde espresso
1–2 cups ice cubes
Cold oat milk, to taste
¼ cup packed light brown sugar
2 cinnamon sticks or 1½ tsp pumpkin pie spice
2 tbsp pumpkin puree
½ cup warm water
1 tsp vanilla extract
Instructions
In a saucepan, whisk together brown sugar, pumpkin puree, cinnamon sticks (or pumpkin pie spice), and warm water. Simmer on low heat for 2-3 minutes until slightly thickened.
Remove from heat and stir in vanilla extract. Strain if desired.
In a jar, combine 1 double shot of espresso with 1-2 tablespoons of syrup and ice cubes. Shake vigorously for 20-30 seconds.
Pour into a glass (without ice cubes) and add oat milk to taste.
