  • 140 grams brown sugar
  • 110 grams coconut oil
  • 170 grams pumpkin puree
  • 1 tablespoon maple syrup (optional)
  • 1/2 teaspoon vanilla extract
  • 200 grams all-purpose flour
  • 2 teaspoons baking powder
  • 3 teaspoons pumpkin spice
  • 100 grams powdered sugar
  • 2 tablespoons milk (or non-dairy alternative)
  • Additional maple syrup for glaze

Instructions

  1. Preheat your oven to 175°C (350°F). Grease and flour a small springform pan.
  2. In a mixing bowl, beat the eggs and brown sugar until light and frothy.
  3. Add coconut oil, pumpkin puree, vanilla extract, and optional maple syrup. Mix well.
  4. In another bowl, whisk together flour, baking powder, and pumpkin spice. Gradually fold into the wet mixture until just combined.
  5. Pour the batter into the prepared pan and bake for 25 minutes. Cover with foil and bake for an additional 20 minutes or until a toothpick comes out clean.
  6. Allow to cool completely before glazing with a mixture of powdered sugar, milk, and maple syrup.
