  • 9 Roma tomatoes (sliced lengthwise)
  • 3 tbsp extra virgin olive oil
  • 1 yellow onion (diced)
  • 4 garlic cloves (minced)
  • 1 tbsp fresh thyme (minced)
  • 1 cup fresh basil (roughly chopped)
  • 1 can (28 oz) crushed San Marzano tomatoes
  • 2 cups chicken stock
  • 2/3 cup heavy cream
  • 1 tsp Kosher salt
  • ½ tsp ground black pepper
  • 1 tbsp sugar

Instructions

  1. Preheat oven to 375°F. Arrange halved Roma tomatoes on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 25 minutes.
  2. In a large pot over medium heat, sauté diced onion in olive oil until soft. Add minced garlic and cook for an additional minute.
  3. Stir in thyme, salt, black pepper, crushed tomatoes, fresh basil, and sugar. Simmer for 10 minutes.
  4. Add roasted tomatoes and chicken stock to the pot; simmer for another 30 minutes.
  5. Blend the mixture until smooth using an immersion blender or by transferring to a blender in batches.
  6. Stir in heavy cream until well combined.
  7. Serve hot with optional mini croutons made from toasted bread cubes.
