- 9 Roma tomatoes (sliced lengthwise)
- 3 tbsp extra virgin olive oil
- 1 yellow onion (diced)
- 4 garlic cloves (minced)
- 1 tbsp fresh thyme (minced)
- 1 cup fresh basil (roughly chopped)
- 1 can (28 oz) crushed San Marzano tomatoes
- 2 cups chicken stock
- 2/3 cup heavy cream
- 1 tsp Kosher salt
- ½ tsp ground black pepper
- 1 tbsp sugar
- Preheat oven to 375°F. Arrange halved Roma tomatoes on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for 25 minutes.
- In a large pot over medium heat, sauté diced onion in olive oil until soft. Add minced garlic and cook for an additional minute.
- Stir in thyme, salt, black pepper, crushed tomatoes, fresh basil, and sugar. Simmer for 10 minutes.
- Add roasted tomatoes and chicken stock to the pot; simmer for another 30 minutes.
- Blend the mixture until smooth using an immersion blender or by transferring to a blender in batches.
- Stir in heavy cream until well combined.
- Serve hot with optional mini croutons made from toasted bread cubes.
