  • 1 cup heavy cream
  • 2 cups fresh spinach

Instructions

  1. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, garlic, Italian seasoning, salt, and pepper. Form into small meatballs.
  2. Heat olive oil in a pot over medium heat. Brown meatballs in batches for about 5 minutes; set aside.
  3. In the same pot, sauté onions until translucent (3-4 minutes).
  4. Add chicken broth and bring to a boil; reduce heat to simmer.
  5. Return meatballs to the pot and simmer for 15 minutes.
  6. Stir in heavy cream and spinach until the spinach wilts (about 2 minutes).
  7. Serve hot with fresh basil as garnish.
