  • 1 teaspoon fresh thyme (or ½ teaspoon dried)
  • Salt and pepper to taste
  • Optional: ½ cup grated Gruyère cheese, 1 tablespoon Dijon mustard
  • 1 package of puff pastry (2 sheets, thawed)
  • 1 egg, beaten (for egg wash)

Instructions

  1. Caramelize the onions by heating olive oil in a skillet over medium heat. Add sliced onions and a pinch of salt; cook slowly for 15-20 minutes until golden brown and sweet.
  2. In a bowl, mix the ground sausage with caramelized onions, thyme, salt, and pepper. Optionally fold in Gruyère cheese and Dijon mustard.
  3. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  4. Roll out the puff pastry on a floured surface and cut into rectangles (about 4×6 inches). Place filling on each rectangle; fold over and seal edges with a fork. Brush tops with beaten egg.
  5. Bake for about 20-25 minutes until golden brown. Let cool slightly before serving.
