  • 2 pounds bone-in skin-on chicken thighs
  • 1 cup chopped onion
  • 2 cups chopped celery
  • 1.5 cups chopped carrots
  • 1 large yellow bell pepper, chopped
  • 1 pound russet potatoes, peeled and cubed
  • 4 cloves garlic, chopped
  • 14.5 oz can no-salt diced tomatoes
  • 32 oz low-sodium chicken stock
  • 4 cups water
  • 0.5 cup dry ditalini pasta
  • Fresh parsley, black pepper, and salt to taste

Instructions

  1. In a large pot, combine chicken thighs, onion, celery, carrots, bell pepper, potatoes, garlic, diced tomatoes, bay leaves, and salt.
  2. Add chicken stock and water; season with black pepper. Bring to a boil then reduce heat to low.
  3. Simmer for about 30 minutes until chicken is tender.
  4. Stir in ditalini pasta and cook for an additional 13-15 minutes until tender.
  5. Remove chicken from the pot; shred and return to soup.
  6. Discard bay leaves and stir in fresh parsley before serving.
