  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 cup sour cream
  • 3 large eggs
  • 2 tsp vanilla extract
  • 4 oz dark chocolate, melted

Instructions

  1. Preheat your oven to 325°F (160°C). In a bowl, mix graham cracker crumbs and melted butter; press into the bottom of a springform pan.
  2. In another bowl, beat softened cream cheese until smooth. Gradually add sugar, sour cream, and vanilla extract until well combined.
  3. Add eggs one at a time, mixing gently after each addition until just blended.
  4. Pour the filling over the crust and bake for 50–60 minutes until set but slightly jiggly in the center.
  5. Allow to cool in the oven for an hour before refrigerating for at least four hours.
  6. Once chilled, drizzle melted dark chocolate in a spiderweb pattern on top before serving.
