  • 4 medium tortillas (flour, whole wheat, or gluten-free)
  • 2 cups fresh spinach (chopped)
  • 1 cup feta cheese (crumbled)
  • 1/4 cup sun-dried tomatoes (chopped)
  • 1/4 cup black olives (sliced)
  • 1/2 cup cooked grilled chicken (diced) – optional
  • 2 tablespoons olive oil or butter

Instructions

  1. Heat a skillet over medium heat and sauté chopped spinach in olive oil until wilted.
  2. In a bowl, combine wilted spinach with crumbled feta, sun-dried tomatoes, black olives, and diced chicken if desired.
  3. Place filling on half of each tortilla and fold over to seal.
  4. Cook quesadillas in the skillet with olive oil or butter for about 3-4 minutes on each side until golden brown and crispy.
