  • 1.5 pounds beef belly, cut into 1-inch pieces
  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 1 thumb-sized piece of ginger, peeled and sliced
  • ¼ cup light soy sauce
  • ¼ cup dark soy sauce
  • ⅓ cup apple vinegar (or another non-alcoholic option)
  • ¼ cup hoisin sauce
  • ¼ cup brown sugar
  • 1 cup water
  • Chopped green onions and sesame seeds for garnish

Instructions

  1. Heat vegetable oil in a large pan over medium heat. Sear beef belly pieces until browned on all sides (about 5-7 minutes). Remove from the pan.
  2. In the same pan, sauté minced garlic and sliced ginger until fragrant (1-2 minutes).
  3. Return seared beef to the pan and add light soy sauce, dark soy sauce, apple vinegar, hoisin sauce, brown sugar, and water. Stir well to coat the beef.
  4. Bring the mixture to a boil; then reduce heat to low and simmer uncovered for about 1 to 1½ hours, stirring occasionally until the beef is tender.
  5. Adjust seasonings if needed before serving hot over steamed rice or noodles, garnished with chopped green onions and sesame seeds.
