  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 2 teaspoons garlic powder
  • 2 teaspoons dried thyme
  • 1 teaspoon paprika
  • 1 cup bread crumbs
  • 1/2 cup onion, finely chopped
  • 1/2 cup celery, finely chopped
  • 1/2 cup carrots, finely chopped
  • 1/4 cup chicken broth
  • 1/4 cup white grape juice or apple juice
  • 1/4 cup raisins or dried cranberries (optional)
  • 1/4 cup chopped pecans or walnuts (optional)
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons butter, melted

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Sauté onions, celery, and carrots until soft.
  3. Stir in bread crumbs, chicken broth, and seasonings until well combined.
  4. Pat hens dry and stuff each with the mixture. Place in a roasting pan and drizzle with olive oil.
  5. Baste with white grape juice or apple juice and bake covered for about 50 minutes.
  6. Remove foil for the last 20 minutes until golden brown and cooked through (165°F internal temperature).
  7. Allow resting for 10 minutes before serving.
