  • 3 pasilla peppers
  • 2.5 pounds beef chuck (cut into bite-sized cubes)
  • 2 teaspoons cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 medium white onion (chopped)
  • 3 jalapeno peppers (chopped)
  • 2 serrano peppers (chopped, optional for extra heat)
  • 4 cloves garlic (chopped)
  • 2 cups beef stock
  • 2.5 cups water (+ more as needed)
  • 2 tablespoons masa harina (corn flour, for thickening if desired)
  • 1 tablespoon brown sugar

Instructions

  1. Toast dried peppers in a pan for 1-2 minutes until fragrant.
  2. Soak toasted peppers in hot water for 20 minutes, then blend until smooth.
  3. Season beef cubes with cumin, salt, and pepper.
  4. Sear beef in olive oil until browned; set aside.
  5. Sauté onion, jalapeños, and garlic in the same pot until softened.
  6. Return beef and add chili paste, broth, brown sugar, and masa harina; stir to combine.
  7. Bring to a boil, reduce heat, cover, and simmer for about 2 hours.
