  • ¼ cup onion (diced)
  • 2 cloves garlic (minced)
  • 1 tablespoon fresh minced ginger
  • 10 oz ground chicken
  • ¼ cup Tamari (low sodium)
  • 2 Tablespoon Thai sweet red chili sauce
  • Juice of 1 lime
  • â…“ cup cashews (chopped)
  • 1 head butter lettuce (leaves separated)

Instructions

  1. Heat sesame oil in a pan over medium-high heat. Add diced onions and sauté until golden brown.
  2. Stir in minced garlic and ginger; cook for about 30 seconds.
  3. Add ground chicken, breaking it apart as it cooks. Season lightly with salt and pepper, cooking until golden brown, about 3-4 minutes.
  4. In a small bowl, mix Tamari, Thai sweet chili sauce, lime juice, and maple syrup. Pour this sauce over the cooked chicken along with chopped cashews; toss to combine and simmer on low for two minutes.
  5. Remove from heat and stir in shredded carrots and chopped scallions.
  6. Assemble wraps by placing a spoonful of the chicken mixture in each lettuce leaf.
