  • 1 teaspoon onion powder

  • Salt and black pepper, to taste
  • 8 oz linguine
  • Salted water, for boiling
  • ¼ cup reserved pasta water
  • ½ cup (1 stick) unsalted butter, softened
  • 2 garlic cloves, minced
  • ¼ cup chicken broth
  • ¼ cup heavy cream
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley, chopped
  • ½ teaspoon crushed red pepper flakes (optional)

Instructions

  1. Cook the linguine in salted boiling water until al dente. Reserve some pasta water before draining.
  2. Season the cubed chicken with garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and pepper.
  3. In a skillet, heat olive oil and butter over medium-high heat. Sear the seasoned chicken until golden brown and cooked through.
  4. In the same skillet, make the cowboy butter sauce by melting butter and adding minced garlic. Stir in chicken broth, lemon juice, and Dijon mustard; simmer for 2 minutes before adding heavy cream and Parmesan cheese.
  5. Combine the cooked chicken and linguine with the sauce. Add reserved pasta water as needed for consistency.
