  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 1 vanilla bean (seeds scraped)
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar (for topping)

Instructions

  1. Preheat oven to 325°F (160°C). Line a muffin tin with cupcake liners.
  2. In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press about 1 tablespoon into each liner.
  3. Beat cream cheese and sugar until smooth; add eggs one at a time, mixing well. Stir in sour cream, heavy cream, vanilla bean seeds, and extract.
  4. Fill liners three-quarters full with cheesecake batter. Bake for 20–25 minutes until slightly jiggly in the center.
  5. Cool at room temperature for two hours before chilling in the refrigerator.
  6. Before serving, sprinkle sugar on top and caramelize with a kitchen torch until golden brown.
