  • 1 3/4 cups apple juice
  • 2 tablespoons apple cider vinegar
  • 1/2 cup brown sugar
  • 1 teaspoon vanilla bean paste (or extract)
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/8 teaspoon salt

Instructions

  1. Core and chop the apples into large chunks. Place them in a large pot with apple juice and apple cider vinegar. Bring to a boil, then reduce heat to simmer and cover for about 30 minutes until softened.
  2. Stir in brown sugar, vanilla paste, cinnamon, nutmeg, cloves, and salt until well combined.
  3. Blend the mixture using an immersion blender until smooth; it may look thin initially.
  4. Return to the pot and cook uncovered over medium heat for 30-45 minutes, stirring occasionally until thickened.
